Apple-carrot salad with raisins, honey dressing, nuts, seeds and herbs

Ingredients

  • 0.25 leaves Lettuce
  • 2 Large carrots
  • 1 Granny Smith apple
  • 1 Sweet apple of your choice
  • 50 g Raisins
  • 30 ml White balsamic vinegar
  • 1 Lemon
  • 1 tbsp. Honey
  • Salt, pepper
  • 10 g Ginger
  • 2 tbsp. Walnut oil
  • 8 Dried apricots
  • 50 g Cahew nuts
  • 25 g Pistachios
  • Mint or sorrel

Preparation

Step 1
Peel and grate the ginger. Juice the lemons and make a sweet and sour dressing from the juice, ginger, balsamic vinegar, spices and honey.

Step 2
Lightly roast the cashew nuts and pistachios in the oven or in a frying pan.

Step 3
Peel and core the carrots and apples and chop them in the salad to go. Season with a little salt and mix gently, then sweat for 5 minutes. Add the raisins and dressing. Roughly pluck the mint and chervil leaves and add to the salad as well. Mix the salad again. Garnish with nuts, herbs and apricots before eating.
