Wash the pak choi and asparagus.
Then cut the pak choi in half lengthwise and cut off the woody end of the asparagus.
Cut the peel off the orange and fillet it. Cut the passion fruit in half and carefully loosen the flesh with a spoon.
Now slice the chillies into fine rings.

Preheat the frying pan over a medium heat.
Halve the lime and squeeze the juice into a small bowl, add the hoisin sauce and maple syrup and stir with a whisk.
As soon as the frying pan is hot add a little oil and fry the green asparagus.
After about 2 minutes, add the pak choi and fry both for another 2 minutes, carefully turning the pak choi.
Then pour the dressing, orange fillets and chillies over the pak choi and asparagus, turn off the heat and let the frying pan rest for 2–3 minutes.

Arrange the pak choi and asparagus on plates and sprinkle with the cashews, sesame seeds and coriander.
Finally, pour the stock from the frying pan over the vegetables using a spoon and serve.
