Belgian waffles with vanilla cream and caramelized fig

Step 1
Dissolve the yeast in lukewarm milk and leave for approx. 10 min.
Beat the eggs with 50 g sugar and the vanilla sugar until creamy. Add yogurt, flour, and yeast/milk mixture, and stir. Stir into a smooth dough with the melted butter after it has cooled down. Fold in the decorating sugar.

Leave for approx. 45 min at a warm location.
Add 1 tablespoon of dough to each buttered waffle iron and bake a serving of waffles.
Step 3
For the cream, beat the egg yolks with the sugar until thick and foamy. Cut the vanilla pod lengthwise and remove the pulp. Add to the cream with the mascarpone and lemon zest, whip briefly and chill. If it is too liquid when serving, whip again briefly.

Step 4
For the figs, caramelize sugar in a coated frying pan, and for about 1 minute, caramelize the figs on the cut side after halving lengthwise. Remove from the frying pan and dissolve the caramel with orange juice.

Coat the waffles with the cream and cut into shapes if desired. Cover with the fig halves. Drizzle over the orange caramel.
To add a little crunch, roast 1 tbsp of quinoa without grease (attention: it pops), then add on top.
