Broad bean and date spread

Recipe for One Pot Pressure Cooker Perfect / Perfect Premium

Ingredients

4 People
  • 200 g Dried broad beans (alternatively fava beans)
  • 1 Onion
  • 2 Garlic
  • 1 tsp. Baking soda
  • 100 g Pitted dates
  • 1 1 organic lemon, juice and zest
  • 40 g Tahini (sesame paste)
  • 40 g Olive oil
  • 60 ml White wine vinegar
  • 100 ml Water
  • 1 tsp. Salt

Preparation

Step 1
Wash the dried broad beans thoroughly and soak in plenty of water for at least 8 hours or overnight.

Step 2
Rinse and drain the soaked broad beans. Then peel the onion and garlic cloves and cut the onions into quarters. Place the broad beans in the pressure cooker with the onions, garlic and baking soda. Close the pressure cooker lid and heat the pot on highest setting. After it reaches cooking setting 2, cook the broad beans on a medium heat for 30 minutes until soft.

Step 3
Carefully release the steam and open the lid. Check that the broad beans are soft and well cooked. If the broad beans are still too firm, the cooking process can be extended by a few minutes. Drain the cooked broad beans and reserve some of the cooking liquid.
Step 4
In a blender, process the cooked broad beans, dates, tahini, oil, white wine vinegar, lemon juice and lemon zest into a smooth, creamy spread. If necessary, add a little of the cooking water to achieve the desired consistency.

Serve the broad bean and date spread chilled as a spread for bread, a dip for vegetable sticks or as a filling in sandwiches.
