Chocolate espresso granola

Ingredients

  • 1 Small cup espresso
  • 2 tbsp. Maple syrup
  • 1 tsp. Cinnamon
  • 1 tsp. Cardamom
  • 1 tbsp. Cocoa powder
  • 2 cups Oat flakes
  • 0.5 cups Shredded coconut
  • 0.5 cups Pumpkin seeds, nuts, chocolate shavings depending on your preference
  • 1 Salt

Preparation

Step 1
Pre-heat the oven to 160°C.
Step 2
Mix the maple syrup, espresso, cinnamon, cardamom, salt and cocoa powder until well blended. Add the oat flakes, shredded coconut, pumpkin seeds, nuts and salt and mix until everything is evenly coated.

tbsp. Cocoa powder
cups Oat flakes
cups Shredded coconut
cups Pumpkin seeds, nuts, chocolate shavings depending on your preference

Step 3
Place in the oven and bake for 25 minutes (or until crisp), rotating the tray and stirring the granola halfway through. Remove from the oven, add the chocolate shavings and mix the granola. This allows the chocolate chips to melt and form lumps.
Step 4
Allow to cool completely and store in an airtight container.
