Preparation
Step 1
In the bowl of a stand mixer, mix flour with yeast.
Add warm milk (~ 40 C), sugar, egg yolks, salt, and start kneading.
Continue for around 10 minutes at a low speed.
Cover with plastic wrap or a kitchen towel and leave the dough in a warm place for an hour, or until it doubles its size.
For the Dough:

Step 2
Transfer the dough on a countertop and knead with your hand for a minute.
Divide into 2 parts and roll out each part into a square (approx. 30x30cm).
Spread each part with soft butter and sprinkle with a mixture of cinnamon and sugar.
Tightly roll the dough up. Cut 2-3cm sections and transfer into a baking pan.
Then, cover with a plastic wrap or a kitchen towel for about 20 minutes.
In the meantime, preheat an oven to 180 C. Bake for 20 – 25 minutes.
For the Filling:

gCane sugar
Step 3
Once it cools down prepare the frosting by mixing powdered sugar with lemon juice.
Pour it on your cinnamon rolls.
You can use a spatula to cover every bun with frosting.
