Preparation
Step 1
In a bowl, mix the miso paste, mirin, soy sauce, honey and grated ginger well.
Place the cod fillets in the marinade, rub in well and leave to marinate for at least 30 minutes (or up to 2 hours) in the fridge.

Step 2
Peel and core the apples and cut into small pieces.
Cook the apple pieces in a pan with a little water, butter, salt and lemon juice for approx. 10-15 minutes until soft.
Blend the apples to a smooth purée using a hand blender. Optionally season with sugar and pass through a sieve.

Roughly chop the chives and puree in a blender with the oil and a pinch of salt until the oil is smooth.
Puree until the oil turns a bright green color.
Filter the oil through a fine sieve or cloth to obtain a clear green liquid.

Step 4
Quarter the radishes and marinate with rice vinegar, sugar and a pinch of salt.
Leave to stand.

Step 5
Preheat the Multi Taste Air Fryer to 180 °C.
Remove the cod fillets from the marinade (wipe off any excess marinade) and place on a baking paper in the Air Fryer.
Cook for about 8-10 minutes until the fish is tender and slightly translucent.
Step 6
Use raw apple slices, radishes and sprouts to garnish the dish.
