Creamy beans & peas stew with herbs & radishes

  • 1 Onion
  • 1 Garlic
  • 1 tsp. Chili
  • 2 tbsp. Olive oil
  • 400 g Giant white beans, drained
  • 200 ml Water
  • 1 Bay leaf
  • 400 g Spinach
  • 100 g Peas, blanched
  • 1 Organic lemon
  • Salt
  • 50 g Pine nuts
  • 4 Radishes
  • 1 pkg. Red radishes Cress
  • Dill

Preparation

Step 1

Step 2
First, finely dice the onion and garlic and sauté them with chili powder in olive oil. Add the drained beans, water, and bay leaf, and let it simmer for 10 minutes.

Step 3
Now blanch the spinach and peas. Process the spinach into a puree in a blender with some cooking water. Stir the spinach puree and peas into the beans and season with lemon juice, lemon zest, and salt.

Roast the pine nuts in a pan without fat. Thinly slice the radishes.
