Preparation
Step 1
Press the tofu lightly on a paper towel to absorb the moisture and dice into approximately 1.5 cm cubes.
Mix the tofu cubes in a bowl with a bit of cornstarch, a generous pinch of salt, sesame seeds and sesame oil. Spread on the grill rack and bake on the nuggets function for 18 minutes until crispy.

In the meantime, wash the peppers, remove the stem and core and cut into strips. Cut the spring onions into approximately 2 cm slices and set aside.
Peel and finely dice the garlic and ginger and sauté in a pot heated with a little vegetable oil. Deglaze with the soy sauce, maple syrup and oyster sauce.

Mix a little cornstarch with cold water and add to the pot together with the star anise. Allow to simmer on low heat for 5 minutes.
Prepare the rice according to the package instructions.

Step 4
Transfer the baked tofu from the hot air fryer to a plate. Add the peppers and leeks to the basket and roast in manual mode at 200°C for 10 minutes. Add the edamame 2 minutes before the end of the cooking time.
Serve the rice in bowls, topped with vegetables and tofu and drizzle with the teriyaki sauce.
