Earl Grey Blueberry Cake

  • For the Cake:
  • 80 ml Earl Grey Tea
  • 2 Eggs
  • 80 g Melted butter
  • 100 g Sugar
  • 60 ml Buttermilk
  • 0.5 Lemon
  • 200 g All-purpose flour
  • 2 tsp. Baking powder
  • Salt
  • 1 cups Fresh blueberries
  • For the Icing:
  • 0.5 cups Powdered sugar (or more if needed)
  • Lemon juice from half of a lemon (or more if needed)

Preparation

Step 1
Brew earl grey tea in a tea pot.

Melt the butter in a saucepan and remove from the heat.

In the WMF KITCHENminis Kitchen Machine, beat eggs with sugar, add the melted butter, buttermilk and lemon zest. Mix in the tea. Cut open the tea bag and stir the tea leaves into the pot as well. At the end, add all dry ingredients and mix. Stir the blueberries into the mixture. Keep some blueberries aside for decoration.
For the Cake:
Eggs
g Sugar
ml Buttermilk
Lemon
g All-purpose flour
tsp. Baking powder
Salt
cups Fresh blueberries
Step 4
Pre-heat the oven to 180 C. Transfer the mixture into a baking pan and bake for around 50 minutes. Leave to cool down.
Step 5
Mix powdered sugar with lemon juice to make a thick icing. Pour the glaze over the cake. You can decorate with more blueberries.
For the Icing:
