Recipe for Gourmet Pasta Machine
Preparation
Step 1
For the Pasta:
Sift the flour and mix in eggs. Knead with the dough hook until it combines to become cohesive and smooth. You might need to help the dough with your hands at some point. The whole process of kneading should take around 10-15 minutes. You can also add a few drops of water if it still feels very dry during this step. Once it’s fine, shape into a ball and wrap into a plastic wrap. Leave it to rest for 30 minutes.
Divide the dough into 4 pieces.

Step 2
Flatten each piece with your hands and run it through the widest setting of the pasta machine. Repeat twice. Then move on to thinner settings. Running through each one until achieving the desired thickness. Next, run the pasta sheets through the tagliatelle pasta attachment. You can leave it to dry or cook while still fresh.
It takes around 4 minutes to cook. You can add a bit of olive oil into the boiling water.
Step 3
For the sauce:
Heat the pan with olive oil. Chop vegetables. Add shallot and garlic, cook and stir until lightly browned and fragrant. Then add habanero pepper and cook for another 2 - 4 minutes. Mix in the cream and cream cheese, then cook for a moment stirring all the time, letting all the ingredients combine.
While still hot, pour on the cooked pasta and sprinkle generously with parmesan cheese.
