Step 1
For the Toast:
Preheat the oven to 93°C (200°F). Line a baking sheet with a wire rack. Arrange the bread slices in a single layer on the rack and let them dry in the oven for about 10 minutes, turning once. Transfer to a plate.

To make the egg mixture, in a large bowl, whisk in a large bowl the eggs, sugar, and salt until well combined. Add the milk and whisk again.
Lay four slices of bread on a work surface and spread 2 tbsp peanut butter on each. Top with the remaining slices to form sandwiches.

For frying, heat a large pan or wok with oil to 177°C (350°F). Dip each sandwich into the egg mixture, ensuring it is fully coated. Place the soaked sandwich into the hot oil and fry until golden brown, about 2-3 minutes per side. Drain on paper towels.
