Hot gogi cauliflower with kimchi salad

Ingredients

  • 1 Cauliflower
  • Salt
  • 20 ml Sesame oil
  • 150 ml Water
  • 2 tbsp. Cornstarch
  • 1 tsp. Garlic powder
  • 1 Garlic
  • 10 g Ginger
  • 75 ml Honey
  • 20 ml Soy sauce
  • 3.5 tbsp. Gochujang (Korean bean paste)
  • 2 Carrots
  • 3 Stalks spring onions
  • 2 tbsp. Sesame seeds (black & white)
  • 350 g Kimchi
  • 20 ml Roasted sesame oil

Preparation

Step 1
Remove the leaves and stem from the cauliflower and separate the florets. Mix the cornstarch, salt, garlic powder and oil in a bowl and add the florets. Spread the cauliflower florets on the grill of the hot air fryer and roast on the vegetable function for 18 minutes.

Step 2
Meanwhile, peel and finely grate the garlic and ginger, sauté in a pot with a little oil and deglaze with honey, soy sauce and water. Stir in the gochujang paste and simmer for approx. 3 minutes until a thick hot gogi sauce forms. Peel the carrot and cut or grate into fine strips. Slice the spring onions into rings and toast the sesame seeds in a pan without oil until golden brown.

Step 3
Mix the kimchi, carrot, spring onions, sesame seeds and sesame oil in a bowl and season with salt. In a separate bowl, mix the cauliflower with half of the hot gogi sauce and arrange in a dish. Sprinkle the kimchi salad with a few sesame seeds and serve with the remaining sauce.
