Mix olive oil with pressed garlic, lemon zest, salt and pepper. Brush the chops with the oil mixture and cover with the herbs, marinate in a bowl covered in the refrigerator for about 3-4 hours (it also works overnight).

Drain, remove garlic and herbs and fry according to the degree of cooking. Remove meat from pan and let marinate briefly in aluminum foil.

Meanwhile, add the quartered shallots to the pan with the marinade until they take on some color and break down slightly. Season with lemon juice, salt and pepper. Remove the meat from the foil, toss briefly in the pan with the shallots and serve.
