Cut the eggplants into 1 cm slices, sprinkle with salt on a cutting board and let sit for 10 minutes .
Pat the eggplants slices with a paper towel and brush lightly with oil. Spread the slices on the grill rack and roast on the pizza setting for 7 minutes.

In the meantime, peel and finely grate the garlic clove and mix with the strained tomatoes, oregano and a good pinch of salt. Slice the olives and tomatoes. Roughly tear the basil leaves and grate the mozzarella.
Once done, top each of the roasted eggplant slices like a pizza and bake again on the pizza setting for 7 minutes.
