  • 2 Rib eye steaks

  • Fresh young garlic
  • 250 g Padrón peppers
  • Salt
  • 1 Lime

Preparation

Step 1
Preheat the frying pan over a medium heat. Pat the steaks dry with kitchen paper and season with salt and pepper on both sides. Check if the frying pan is hot enough, then add some oil to the frying pan and sear the steaks on both sides.

As soon as the steaks have a nice crust, turn the temperature down really low, add the rosemary and garlic and let the steaks rest until a core temperature of around 57°C is reached, to achieve a medium level of doneness. While the steaks are resting in the frying pan on a low heat, turn them occasionally so that they do not overcook on one side and the heat can be evenly distributed throughout the meat. When the steaks are ready, arrange them on plates.
