Preheat the frying pan over a medium heat.

As soon as the steaks have a nice crust, turn the temperature down really low, add the rosemary and garlic and let the steaks rest until a core temperature of around 57°C is reached, to achieve a medium level of doneness.
While the steaks are resting in the frying pan on a low heat, turn them occasionally so that they do not overcook on one side and the heat can be evenly distributed throughout the meat.
When the steaks are ready, arrange them on plates.
