Rice pudding with oranges and cardamom

  • 3 Oranges
  • 4 Cardamom pods
  • 1 l Milk
  • 30 g Butter
  • 40 g Brown sugar (plus a little for sprinkling)
  • 1 Of salt
  • 250 g Round grain rice
  • 100 g Whipped cream

Preparation

Step 1
First, wash an orange in hot water and finely grate the peel. Slightly crush the cardamom pods. Then boil the milk with the butter, sugar, salt, orange zest and cardamom pods in the pressure cooker.

Step 2
Sprinkle in the rice and stir. Close the pot and heat up. Once it reaches cooking level 1, cook for 15 minutes. Allow the pressure cooker to cool down until the valve no longer indicates pressure and then open it. Put the rice in a bowl and let it soak for 5 minutes, stirring occasionally.

Thickly peel all the oranges so that the white pith is also removed. Fillet the individual segments removing their outer layer. Whip the cream until stiff and remove the cardamom pods from the rice pudding. Finally, fold in the cream and the orange fillets and serve the rice pudding warm or cold, sprinkled with brown sugar.
