Savory cabbage stew with crispy smoked tofu

Ingredients

4 People
  • 300 g Smoked tofu
  • Vegetable oil
  • 2 stalks Celery
  • 2 Carrots
  • 2 Onions
  • 2 Garlic
  • 2 tbsp. Bulgur
  • 2 tbsp. Tomato paste
  • 1 l Vegetable stock
  • 1 Small savoy cabbage
  • 1 Bay leaf
  • 2 Pimento corns
  • 2 tbsp. Soy sauce
  • 1 bunch Curly parsley
  • Salt, pepper, and sugar
  • Olives

Preparation

Step 1
Cut the tofu into approx. 1x1cm cubes. Heat some vegetable oil in the pressure cooker pot over a medium heat and fry the tofu for approx. 5 minutes until crispy all over. Remove the tofu cubes and set aside. Peel and wash the vegetables and cut into bite-sized pieces. Add the onions, garlic, carrot and celery to the pot and sauté for around 4 minutes.

Step 2
Then add the tomato purée and bulgur to the pot, fry for 2 minutes and deglaze with the vegetable stock. Add the savoy cabbage, the spices, and a good pinch of salt, close the lid and bring to the boil. Once it reaches cooking setting 1, reduce the temperature and leave to simmer for 10 minutes.

Step 3
Finally, release the steam, open the lid, and season the savoy cabbage stew with salt, pepper, soy sauce and a pinch of sugar. Divide the stew between footed plates or bowls and serve with the crispy tofu, parsley and a few drops of olive oil.
