Sea bream with Mediterranean vegetables

  • 6 Mini zucchinis
  • 8 Mini carrots
  • 1 Red onion
  • 1 Garlic
  • 2 Sea bream fillets
  • Salt & red pepper
  • A little oil for frying
  • 30 g Butter
  • Thyme
  • 1 Lemon

Preparation

Step 1
Wash the mini vegetables and cut them in half. Peel the red onion, cut in half lengthwise and cut into thin wedges. Peel the garlic and slice into thin rings.

Preheat the frying pan over a medium heat. Wash the sea bream fillets briefly under cold water and pat them dry. Season the sea bream fillets with salt and pepper. Carry out a water test to see if the frying pan is hot enough. Add a little oil to the frying pan and fry the sea bream fillets on their skin side until they are almost translucent. Then turn down the heat slightly and add the butter, thyme and garlic. Nap* the fillets using a spoon. As soon as the fillets are ready, arrange them on a plate.

*Napping: The term napping comes from French cuisine and the word for tablecloth. In the culinary world, it means that you completely cover a dish with a sauce. In our case, this is the melted butter, which has absorbed the flavor of the thyme and garlic. What we want to achieve is that, on the one hand, the sea bream fillets better absorb the flavor, especially on the "flesh side". And on the other hand, the cooking time is shorter, as the fillets also get some heat from above.
Step 4
Carefully clean the frying pan with some kitchen paper and return it to the hob. As soon as the frying pan has heated up again, add a little oil and fry the vegetables for about 5 minutes until al dente. Season with salt, pepper, thyme and a little lemon juice and serve.
