Sun wheat salad bowl with apple, avocado, pistachios and feta

Recipe for One Pot Pressure Cooker Perfect / Perfect Premium

Ingredients

4 People
  • 200 g Wheat or spelt grains
  • 2 Shallots
  • 2 Garlic cloves
  • 1 tsp. Mustard
  • 1 Organic lemon
  • 30 ml Apple cider vinegar
  • 90 ml Olive oil
  • 2 Stalks celery
  • 1 bunch Parsley
  • 1 bunch Mint
  • 1 bunch Of dill
  • 1 Apple
  • 60 g Pistachios
  • 150 g Feta cheese
  • 1 Avocado
  • Salt and pepper for seasoning

Preparation

Step 1
Put the wheat grains in the pressure cooker, cover with plenty of water, add a generous pinch of salt and close the lid. Heat the pressure cooker on the highest setting. After it reaches cooking level 2, reduce the heat and cook the wheat for 20 minutes. Then release the steam from the pot, pour the wheat through a colander and leave it to cool down a little.

Step 2
In the meantime, peel and finely dice the shallots and put them in a salad bowl. Peel and finely grate the garlic. Then mix the mustard, juice, grated lemon, vinegar and olive oil with the shallots to make a vinaigrette. Also add the lukewarm wheat, mix everything well and let it stand for approx. 10 minutes.

Step 3
Then remove the woody ends from the celery and finely dice. Wash and spin dry the parsley, mint and dill. Pluck the leaves off the herbs, keeping a few leaves to one side for decoration, and roughly chop the rest. Also dice the apple. Mix the celery, chopped herbs and apple into the salad and season with salt and pepper.

Step 4
Finally, divide the salad among the bowls, serve with chopped pistachios, feta, the remaining herbs and avocado.
