Turkish red lentil soup

Ingredients

  • 175 g Red lentils
  • 350 g Radishes
  • 1 Onion
  • 2 Garlic
  • 1 Carrot
  • 1 Medium-sized potato
  • 45 ml Olive oil
  • 1 tbsp. Tomato paste
  • 1500 ml Vegetable stock
  • 1 tsp. Ground cumin
  • 1 tsp. Ground coriander
  • 2 tsp. Dried mint
  • Chili flakes
  • Salt
  • 1 bunch Parsley
  • 1 Lemon
  • 150 g Pickled pepperoni

Preparation

Step 1
Wash and peel the radishes and cut into slices 0.5 cm thick, then add to a bowl filled with cold salty water.

Put the lentils in a sieve, wash thoroughly and leave to drain. Peel the onion and garlic and chop finely. Peel the carrot and potato and cut into roughly 1 cm cubes. Heat half of the oil in the pressure cooker and sauté the onion and garlic until glassy. Add the carrots and potato and sauté the mixture for 3 minutes over a medium heat; stir occasionally.

Step 3
Add the washed lentils and cook for a further minute over a medium heat while stirring constantly.
Step 4
Mix in the tomato paste, pour over the stock and bring to the boil, stirring well. Add the spices, close the lid and cook for 8 minutes after reaching cooking level 2.

Let out the steam, open up the pot and season the soup with salt, chili flakes and the juice of one lemon. Strain the radish through a sieve.

Arrange the lentil soup onto plates, drizzle over the remaining olive oil and serve with radish, parsley, what’s left of the orange juice and the picked pepperoni.
